peanut butter nice cream

When I first heard of a nice cream I was a bit sceptical because it sounded too good to be true. You mean you can make a delicious and worthy ice cream alternative with basically just bananas? I needed some time to wrap my head around that before I could try it for myself. 

And now it’s a perfect time for trying nice cream out as it is boiling outside in Berlin lately. Nice cream, ice cream, and popsicles as well as keeping the blinds constantly down is how I’m surviving. 

And so without further ado here is this week’s recipe - a peanut butter nice cream using just a few simple ingredients and a blender or a food processor. 

 

 

 

Tips and notes:

  • Freeze bananas for at least a couple of hours or even overnight. Now that it's so hot and bananas tend to go bad so quickly I just peel the bananas, break them into pieces and freeze them for as long as it takes me to get around to using them in this recipe, be it overnight or a couple of days. 
  • Feel free to experiment with adding different flavors here. This is practically a base recipe and you can add almost anything you like. 
  • This nice cream freezes well. I am actually the kind of a person who likes their ice cream to be almost frozen solid so after leaving ready nice cream in the freezer overnight I like to just break it into hard pieces and eat as is. But you can of course wait for it to thaw a bit first so that it really resembles cream. 
  • This nice cream of course has a distinct banana taste regardless of the peanut butter added. 
  • I recommend blending the bananas first and then adding the peanut butter, otherwise, the peanut butter sticks to the sides. 

 

Vegan Peanut Butter Nice Cream

 

 

Ingredients

 

 

1 kilogram ripe bananas

8 tablespoons oat milk

6 (or more) tablespoons creamy peanut butter

2 teaspoons vanilla extract

 

 

 

Instructions 

 

1. First peel the bananas. Cut them or crumble them using your fingers into large pieces. Put them into a container and freeze for about 2 hours or longer. You can also leave them in the freezer overnight. 

2. Once the banana pieces are frozen place them into a blender or a food processor. Add the rest of the ingredients and blend until smooth. 

3. Enjoy immediately or place in the freezer.
