Easy Tofu Mince (Ground Tofu)

Here is the simplest tofu minced (or ground) "meat" recipe. It's not much to look at but it works perfectly for use as a "meat" base in recipes. For instance, both my recipes - golubtsi and pelmeni use this tofu mince. 

In fact, I have now stopped buying minced "meat" in the stores. There are many good alternatives these days, especially in Berlin. But, they can be costly still and they are often different in texture and taste. Meaning that unless I buy a familiar brand I'm not sure what the end result is going to be. 

With this recipe, however, I know exactly what to expect. I know what the texture and the taste will be like. Because I use this recipe as a base for other recipes I like to bake the tofu only slightly as it will be further cooked later. 

 

Tips and notes:

  • Use extra firm tofu to make sure the mince is not too soggy.
  • You can either bake or fry this tofu mince, depending on what you are planning to do with it. If I need to fry the vegetables for the recipe as well then I just go ahead and fry this tofu mince. 
  • In any case make sure to bake or fry the mince first, before adding any vegetables or other ingredients to it because you want the excess liquid from the tofu to evaporate a bit. 

 

Easy Vegan Tofu Mince (Ground Tofu) Recipe

Ingredients

 

400 grams extra-firm tofu  

2 teaspoons miso paste

2 tablespoons soy sauce

2 tablespoons neutral vegetable oil (such as sunflower oil)

1 teaspoon onion powder

1 teaspoon garlic powder

1/2 teaspoon pepper

1 teaspoon sweet paprika

3 tablespoons nutritional yeast

2 teaspoons vegan Worcestershire (Worcester) sauce 

 

 

Instructions 

 

1. Using your fingers crumble up the tofu into small fluffy bits. 

2. Now add all the rest of the ingredients to the tofu and mix well. 

3. Now you can either bake the tofu until slightly brown and then use it in the next recipe that you need the ground tofu for or you can fry the tofu. Easy!
